BBQ and Biscuit Skillet Casserole

It’s hard to beat a hearty one-dish meal on a cold day, and this is one of our newest favorites.
BBQ Biscuit 4

• 1 ½ lb. ground beef
• ½ c. celery, chopped
• 1 tsp. dried minced onion (or equivalent freshly chopped onion)
• 2 T flour
• Pinch of salt and pepper
• 1 ½ c. barbecue sauce
• 1 c. frozen mixed veggies, thawed
• 1 ½ c. shredded cheddar cheese
• 1 can refrigerated biscuits

Brown ground beef in a large cast iron skillet with celery and onion. Drain. Add flour and seasoning. Stir well and cook for 1-2 minutes until the flour is well integrated.

Add barbecue sauce and veggies and cook a few minutes until the sauce and veggies are warmed.

Sprinkle cheese over the surface of the skillet and top with canned biscuits. Bake at 350 for 20 minutes or until the biscuits are cooked through.

I don’t often buy canned biscuits, but I found these on Manager’s Special at Dillons. With coupon, they were $.60, and that’s cheaper than I can make them from scratch. I’m sure this recipe would be just as good (or better) with homemade biscuits.
