Slow Cooker Ham and Bean Soup

This is an easy way to use up leftover ham, and it’s one of our favorite soups!

  • 1 c. mixed dry beans
  • leftover ham bone
  • 1 can condensed tomato soup
  • 5 soup cans of water
  • 8 oz frozen mixed veggies
  • 3/4 c. to 1 1/2 c. chopped ham
  • 1/2 tsp oregano
  • 2 bay leaves
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Soak beans in a bowl overnight, covered by a few inches of water. Drain beans. Add all ingredients except ham bone to a large slow cooker and mix thoroughly. Place the ham bone in the slow cooker. Cook on low for about 8 hours or until beans are done. Remove ham bone. Enjoy!
