Cooking for Two: Steak and Broccoli Stir Fry

This stir fry is ideal for two, but can be expanded to feed a whole family by simply doubling the ingredients. Use any cut of steak you find on sale, since you’ll be cutting it thin enough to make it tender even if it’s a tough cut.

Ingredients

  • 12 oz steak, thinly sliced
  • 1/4 c. soy sauce
  • 1/4 c. water
  • 1/4 tsp dried minced onion
  • 2 pinches garlic powder
  • 1/2 T ground ginger
  • 1 T sesame oil
  • 2 T rice vinegar
  • 2 c. frozen broccoli, thawed
  • hot cooked rice

Method

Heat soy sauce, water, onion and garlic in a medium size skillet over medium heat. Cook 1-2 minutes until the minced onions have rehydrated a bit. Add steak and simmer until steak is browned through (5-10 minutes). Meanwhile, whisk together the ginger, sesame oil and rice vinegar. Add this mixture to the skillet once the steak is done. Stir together, then add the broccoli. Continue cooking until broccoli is tender and has absorbed some of the sauce, about 3 minutes. Serve over hot rice.
