Lemon Bars

These are so good! In fact, you probably shouldn’t make them while you’re alone because you might be tempted to eat half the pan before your family gets home. Plus, they’re fairly easy to make and they don’t call for a bunch of obscure ingredients.


  • 1 3/4 c. flour
  • 1/2 c. powdered sugar
  • 1 c. butter, melted
  • 4 eggs, beaten
  • 2 T flour
  • 1 tsp cornstarch
  • 2 c. sugar
  • 6 T lemon juice
  • powdered sugar for garnishing


Preheat your oven to 350 degrees. Mix 1 3/4 c. flour, powdered sugar and butter in a medium bowl until fully blended. Spread across the bottom of a greased 9×13 pan.

Bake at 350 for 20 minutes. Meanwhile, mix the remaining ingredients thoroughly. After 20 minutes have passed, pull the crust out of the oven. It should be golden brown and your kitchen should smell pretty yummy.

Pour the lemon mixture over the hot crust. Bake 25 minutes more, or until lightly browned on the edges and set in the middle.

Let cool (if you can resist the yumminess!). To serve, dust with powdered sugar and cut into bars.

I’ll warn you: these may be irresistibly tempting to dogs. I left the last one in the pan, sitting on the counter while Eli and I walked to the post office. By the time we got back just a few minutes later, our dog had pulled the dish off the counter and licked it clean!
