Lima beans spend a lot of time being the filler veggie. After all, how often do you see limas outside a can of mixed veggies? This recipe brings lima beans into the forefront, making them less lima-ey by adding tomatoes and spices. I can’t guarantee they’ll become your favorite side dish, but this is a nice change from the standard veggie side.
- 12 oz bag of frozen lima beans, thawed
- 14.5 oz. can diced tomatoes, undrained
- 1 large stalk celery, chopped (or substitute 1/2 tsp. celery seeds if you don’t have fresh celery)
- 1/4 tsp. creole seasoning (optional)
Combine all ingredients in a saucepan. Throw in a dash of salt and pepper at this point or wait until they’re on your plate. Heat to boiling and simmer, covered, for 5-10 minutes.
