On our first date, my hubby and I ate at a German restaurant in the Black Hills. We both had German potato salad, which has a vinegar flavor and is served warm. For our second date, my hubby challenged me to a cooking contest to see which of us could make the best version of the salad…and the rest is history!
We’ve never successfully recreated the salad we had on our first date, but this is a close imitation. It’s more comforting than classic potato salad and it goes well with warm, hearty dishes where you might normally serve mashed potatoes.
- 1/2 lb bacon, diced
- 3 c. potatoes, cooked and cubed
- 1 onion, chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp sugar
- 1/3 c. vinegar
- 3/4 c. water
Cook bacon in a skillet until crisp. Remove bacon and saute onion in bacon drippings. Combine bacon, onion and potatoes in a serving bowl. Add remaining ingredients to bacon drippings in skillet and cook until sugar is dissolved and mixture thickens slightly. Pour sauce over potato mixture and toss to coat. Serve warm.
