Pork loin is a fairly inexpensive meat option when it goes on sale, and it tastes amazing cooked in a slow cooker. Here’s my favorite recipe for mouth-watering, juicy pork loin that’s ready when you get home from work.
- 3-4 pound pork loin (sized to fit in your slow cooker)
- 4 T red wine vinegar
- 1 bag cranberries, fresh or frozen
- 2 tsp mixed grill seasoning (our favorite is Cavenders but you could use any combo that includes garlic, pepper and oregano)
Distribute the cranberries on the bottom of your slow cooker. Lay the pork loin on top, fat side up (if there is one). Sprinkle with the red wine vinegar. Spread your seasoning blend over the top of the pork loin. Cover and cook 8-10 hours on low. Add barbecue sauce to leftovers for a yummy pulled pork sammy.
Tip: It may seem like there isn’t enough liquid in the pot, but remember that the cranberries and loin will release liquid as they cook.
Tip: The meat may look done about 4 hours into cooking, but keep the heat on! The long cooking time is critical to creating a moist, tender pork loin.
