Buffalo Ranch Chicken

This makes a yummy sandwich filling or salad topping with very little effort. Plus, it’s a nice way to enjoy chicken that’s a bit different from the normal roasting or grilling options. You can double or triple this recipe if you are feeding a large group, but it makes enough to feed at least eight people as is.

2-3 pounds chicken breasts or other boneless, skinless cuts

1/4 c. Frank’s Red Hot sauce (or other similar hot sauce), more if you like things a little spicier

1 pkg ranch dressing mix (purchased or homemade like this one)

1 T butter (optional)

Pour hot sauce into crock pot. Lay chicken in a flat layer on top of sauce. Sprinkle ranch dressing mix on top and add butter. Cook on low 3-4 hours.

Remove the chicken from the crock pot and shred it or chop into smaller pieces. Put back into the pot and mix thoroughly with the juices in the pot.

Serve as sandwich filling or salad topping, adding ranch dressing on top to taste.
